Benedictine Cellar master at the Abbey of Hautvillers in the late 17th century, Dom Pérignon is regarded as the father of champagne.  Dom Pérignon the wine is certainly the father of all prestige cuvees. In the early 20th Century Moet Directors were convinced into relaunching the marque, Dom Pérignon. It was designed as a luxury wine for export markets. The first shipment arrived in London in 1935 to resounding success despite the economic slump. To this day Dom Pérignon has stayed true to its original principles. Dom Pérignon is always a Vintage only declared on exceptional years and is always a blend of Chardonnay and Pinot Noir Grapes.

Committed to time, Dom Perignon is always subjected to slow maturation enabling it to transform in stages. Dom Perignons uniqueness lies in the way it evolves in leaps. The wine goes through 3 windows of transition brought on by its subtle metamorphosis. These windows of expression are known as Plenitudes and are unique to Dom Perignon.

These cycles of approximately 8 to 10 years develop and transform further characteristics. The First Plenitude brings Harmony, The second brings energy to the wine and the third complexity.
